About

Named after the Aztec Goddess of Young Corn, Xilonen aims to convert the carnivore for the sake of human health and the healing of the planet by supplying delicious vegan and vegetarian recipes that celebrate Mexico. We feel it is our virtue as hospitality industry leaders to spotlight plant-based, and sustainable recipes to show the public that vegan and vegetarian eating practices can be both accessible and delicious. 

Our belief in global citizenship is equally represented in our product sourcing approach. Relationships with corn purveyor Tamoa, coffee distributor Cafeologia and chocolatier La Rifa are rooted in a shared enthusiasm for supporting farmers with direct payments on surplus production, as not to deprive farmers of their ancient food rites while alleviating their need to relocate to find equitable work. 

Our menu goal is to be 75% to 80% vegan with remaining dishes vegetarian to show how simple gestures from neighborhood institutions can have a lasting impact on climate change.
